My pipes knock when I shut a faucet. What is that?
Usually pressure, not the pipe. When the supply pressure runs above what the fixtures are built for, shutting a valve sends a shock back down the line and you hear it in the walls. On hillside ground that is common, and a failing pressure regulator is the normal cause. It is a small part and a straightforward replacement.

I keep replacing toilet fill valves. Is something wrong?
Almost certainly the pressure. A fill valve is one of the first things to give up when pressure runs high, so replacing it repeatedly is treating the symptom. Check the pressure at the house and if it is above range, fitting or replacing the regulator stops the cycle.
Does being up on the hills affect water pressure at my house?
It does, though not the way people expect. Higher ground usually means lower pressure and lower ground higher pressure, because the pressure comes from the height of the supply above you. Which zone you are in matters more than your own elevation, which is why measuring beats guessing.
My house is one of the older ones on the lower ground. What tends to fail?
The parts that were never meant to last sixty years. Angle stops, flexible supply lines, toilet internals and the water heater. Those are individual jobs rather than a whole-house project, and replacing them as they come costs far less than the emergency version.
